Tostadas could be my new favorite Mexican food. A friend made them for lunch a while ago and they were delicious and so easy. She mixed the meat from a deboned rotisserie chicken (sotre bought), a can of Veg All and some mayo. Top with a few dashes of hot sauce and you’ve got a Chicken Salad Tostada.

I made black bean tacos the other night and they were soooooooo good. I mixed a can of refried black beans in with the ground turkey taco meat – it made the perfect consistancy and the meat didn’t just fall off like it sometimes does. I hadn’t made tacos at home in AGES! Put that back on the “frequent meals” list!

And I posted something to the CAOK pool today – finally! I had been wanting to do it for agaes and finally got the chance.
