[...] And as if there weren’t enough dishes to do already (I don’t have a dishwasher in Korea) I have a big dinner planned for Joe. He’s heading to the field for a week tomorrow so I thought I would make his favorite, fried chicken fingers and rice. Weird combo, I know. Most people eat their fried chicken fingers with fries or mashed potatoes but when your husband is half-Thai you stop questioning the rice-with-everything habit. And since Kelli never lets you down with her fabulous recipes I thought I would try her Spicy Cornbread Muffins, as if we needed another starch at dinner. Starchophobes, look away!
MMMM.....thanks for the recipes. You can't hardly beat a tomato/feta/olive oil combo in my book.
Summer favs are iced lattes, iced tea or my fav: lemon la croix sparkling water over ice with a splash of juice or wine added.
Foods are anything on the grill, salads and strawberries.

Tomatoes, plums and nectarines. I'm going to try both of those recipes. I love things like that for the summer.

Thank you for posting the recipes, Kelli! My favorite summer foods are boiled peanuts (a southern delicacy), watermelon, and succotash--amongst many others. Starting tomorrow I will get all three when I go home to the beach. The boiled peanuts and succotash are not food items I find here in Tucson although I do make them when I find the fresh ingredients.
